Amish Friendship Bread Starter Recipe
Ingredients:
Directions:
For Starter: Dissolve yeast in 1/2 cup of the warm water in a deep glass or plastic bowl. Stir in remaining warm water, flour, sugar and milk.
Beat until smooth using a non metallic spoon, place starter in a large jar or bowl with a tight fitting lid.
Because your first batch of starter contains fresh yeast, you can skip the next set of directions and go directly to the instructions for splitting your starter.
Do not refrigerate! The starter requires 10 days for fermentation.
Day 1- Begin or receive starter.
Day 2-Stir with non metallic spoon.
Day 3-Stir with non metallic spoon.
Day 4-Stir with non metallic spoon.
Day 5- Add 1 cup sugar, 1 cup flour and 1 cup milk.
Day 6- Stir with non metallic spoon.
Day 7- Stir with non metallic spoon.
Day 8- Do nothing.
Day 9- Do nothing.
Day 10- Add 1 cup sugar, 1 cup flour and 1 cup milk.
Put 1 cup of starter in each of three containers. Give 2 away to friends and keep one. This will begin their Day 1.

Amish Friendship Bread Recipe
Ingredients:
optional:
1 Cup dried blueberries, rasins, cranberries, banana or 1 cup of your favorite nuts.
Directions:
You will have 1 cup of starter left besides the 1 cup you have saved for yourself. To the remaining batter add vegetable oil, sugar, flour, baking powder, baking soda, eggs, milk, vanilla pudding mix, cinnamon, and salt. Beat until well blended.
Grease 2 loaf pans well, and sprinkle with cinnamon and sugar, coating bottom well. Turn batter into pans, sprinkle remaining cinnamon sugar onto top of loaves. Bake at 325 degrees for 1 hour.
Cinnamon and Sugar:

Amish Fry Pies
Ingredients:

9 Cups cake flour
-
2 Tablespoons granulated sugar
-
1 Tablespoon salt
-
3 Cups shortening
-
2 Cups water
-
Thick fruit filling (your favorite filling)
-
Shortening for deep frying
Glaze:

Directions:
To make pies, combine in a large mixing bowl the flour, sugar and salt. Cut in shortening until the pieces are the size of small peas. Add water a little at a time until the flour mixture is moistened. Form into 4 balls. Divide each ball into 10 pieces and roll each piece into a circle. Top one side of circle with filling and fold circle in half. Crimp edges to seal.
Heat shortening; Fry a few pieces at a time in hot shortening until golden brown. Cool on wire rack.
Meanwhile, in a large mixing bowl, combine all glaze ingredients, stir until smooth. While pies are still warm, dip them into glaze. Allow pies to drip on wire rack until cool.

Amish Applesauce Cake
Ingredients:

Directions:
Cream butter; add sugar, beat until light. Add egg; beat until fluffy.
Add applesauce; mix well.
Sift together flour, salt, baking powder, soda, cloves, cinnamon and allspice. Add nuts and raisins. Combine two mixtures. Bake in a greased 8-inch square pan at 350 degrees F for 40 to 45 minutes.
Frost with vanilla or chocolate frosting if desired.
Serves: 6

Amish Country Casserole
Ingredients:

1 Pound beef chunks or ground beef
-
1 Onion, chopped
-
1 Can tomato soup, undiluted (regular size)
-
1 Pound egg noodles
-
1 Can cream of mushroom soup, undiluted (regular size)
-
1 Tablespoon olive oil
-
Paprika for garnish

Directions:
Preheat oven to 375 degrees F
Saute chopped onion in olive oil. Add beef, Cook well. Add tomato soup.
Cook egg noodles according to directions on package. Drain well. Add cream of mushroom soup.
Grease large shallow casserole dish. Place 1/2 of beef mixture in bottom of casserole. Top with remaining noodles. If desired, sprinkle paprika lightly over top of casserole.
Bake for 25 to 30 minutes, or until bubbly.

Amish Sunday Potato Salad
Ingredients:

6 Medium potatoes
-
1 Small onion, chopped fine
-
1 Cup celery chopped small
-
1 Teaspoon celery seed
-
1 Teaspoon salt
-
4 Hard cooked eggs, diced
Dressing:

Directions:
Cook the potatoes in their jackets until soft. Peel and dice to bite size piecies. Mix potatoes gently with the remaining 5 salad ingredients; then add the dressing.
To prepare the dressing, mix eggs with sugar, cornstarch and salt. Add vinegar, cream, and mustard. Cook until thickened on medium heat. Remove from heat and beat in butter. Add potato mixture to the cooled dressing, folding gently together.
Serves: 10

Amish Country Pot Roast
Ingredients:

3 Pounds beef pot roast, trim fat
-
1 Tablespoon vegetable oil
-
1/4 Cup soy sauce
-
1 Cup of coffee
-
2 Bay leaves
-
1 Clove garlic minced
-
1/2 Teaspoon oregano
-
2 Onions sliced thin
-
additional coffee and soy sauce as needed to taste

Directions:
Preheat oven to 300 defrees F. Heat oil in large skillet over high heat, then sear meat on both sides. In a large roasting pan, combine one onion and remaining ingredients.
Transfer browned meat to roasting pan and top with second onion. Cover and bake 3-1/2 to 4 hours. Baste every hour with juices.
If liquid begins to boil away, add more coffee or soy sauce as needed. Use pan juices to make gravy. (No salt needed for this recipe).
Serves: 6
